Hi, it’s Donna from Whole Food Bellies again, and today I have some delicious little Pomegranate Chicken Salad Cucumber Bites to share with you.
Even the kids enjoy them due to the extra fun flavors from the added fruit!
We have switched out the heavy mayo you find in a traditional creamy chicken salad with some Greek yogurt for a lightened up version that offers an extra dose of protein. Serve them up on some cucumber slices instead of traditional filo parcels, and you have an appetizer that is light, flavorful, and manageable with a drink in the other hand.
I like to stay well within the season when it comes to Holiday entertaining and have achieved that here by adding a little pop of beautiful color from pomegranate arils. These little fruits really do shine like gems, and they add just the perfect amount of sweetness to these chicken salad cucumber bites when paired with some diced green apple.
This recipe is a great use for leftover chicken. I love using my Macadamia Nut Chicken in it!
How else can this pomegranate chicken salad be served?
Instead of popping the chicken salad on top of a cucumber slice you can add them to a sandwich or a wrap, pop it atop a bed of baby spinach, stuff it into a lettuce leaf or a stick of celery or even use as a chunky dip for your favorite vegetables, which is my favorite way of eating it.

Ingredients
- 2 large chicken breasts cooked and chopped
- 8 oz plain Greek yogurt
- 2 teaspoon dijon mustard
- ¼ cup pomegranate arils
- ½ cup green apple chopped
- ½ cup pecan halves roughly chopped
- 3 green onions finely chopped
- 1 large cucumber cut into roughly 40 thin discs
- salt and pepper to taste
Instructions
- Combine Greek yogurt, dijon mustard and salt and pepper in a large bowl and stir to combine.
- Add in the chopped chicken, pomegranate, apple, pecans and green onions and stir to combine.
- Taste and adjust seasoning as needed. Scoop a heaped teaspoon of the mixture onto the cucumber discs and serve.
