What do you do when it is too hot to turn on the oven and too hot to go outside and grill? Make low carb pizza in a skillet! This easy pizza recipe is low carb, keto, gluten-free, grain-free, sugar-free, and Trim Healthy Mama friendly.

Turning on the stovetop heats up my kitchen much less than turning on the oven so when I craving pizza on a 90+ degree day last week this Low Carb Pizza in a Skillet was my solution.

And I can’t wait to make this Stuffed Crust Pizza low carb next!

What type of dough for Skillet Pizza?

This pizza uses my version of the popular Fathead pizza crust. The first place I ever saw a mozzarella dough was on Up Late Anyway with her Cheese Danish. Those are amazing. With a few tweaks, I made this dough savory for pizza and have used it ever since.

Do you need a microwave for Fathead Dough?

Nope! In the past, I’ve melted the cheese in the microwave but since I was going to use a frying pan anyway I decided to melt the cheese that way. It worked very well. So now I can also tell anyone without a microwave that they don’t actually need one for a mozzarella dough.

What should the cheese look like?

You want the cheese to be runny and gooey before proceeding to the next step.

I like to mix this dough in the food processor because it comes together without all the elbow grease of mixing by hand. It can be difficult to thoroughly incorporate the melted cheese if you mix it by hand.

I didn’t even wash the frying pan. I just pressed the dough into the bottom of it and turned the heat back on low.

You can see how it is starting to puff up. You want the bottom to be deep golden brown before you flip it. I suggest loosening the entire thing with a spatula before attempting to flip it. Otherwise, it may break.

What should the crust look like?

See the deep golden brown? My pizza cracked a little while flipping but that doesn’t impact the flavor. This is more of a fork and knife pizza than a handheld slice.

What kind of sauce can I use?

Flip, top, cover and finish cooking. I used vodka sauce on this because I love the flavor of it and I had a jar open in the fridge. A marinara sauce without added sugar is also a good choice. Other options are alfredo sauce or pesto.

If you’d like a golden cheese crust you can pop this low carb pizza under the broiler for a couple of minutes to brown the cheese. I was feeling too hot to even turn on the broiler for 5 minutes.

Or you can use a mini pastry torch to brown the cheese. My husband bought one for fun and it comes in handy on recipes like this.

Dough Ingredients:

Toppings:

  • 1/4 cup marinara or vodka sauce
  • 1 cup shredded cheese of your choice

Instructions
 

  • Melt cheeses in a medium sized frying pan. Add melted cheese to a food processor with the other dough ingredients. Pulse into a dough forms. Press into the bottom of the medium frying pan.
  • Cook the dough on low heat, covered, for 10 minutes. Raise heat to medium and cook for an additional 4-5 minutes until deep golden brown on the bottom. Carefully flip the dough.
  • Put the toppings on the dough. Cover, reduce heat to low and cook for an additional 10 minutes or until cooked through.

  1. Hi there,

    It looks like you used a non stick skillet, we don’t use coated pans for personal preference so I used my cast iron skillet which is decently ‘primed’ but it was a terrible mess…..the taste was there for sure – it was delicious – but I had to literally scrape it in pieces off my pan and transfer it to the oven. Just wanted to help others who may not realize like I did.4 stars

    1. I’m sorry the cast iron didn’t work! My skillet is hard anodized aluminum. It’s not nonstick with a coating. Cast iron is more textured though so I can understand why it stuck.

    2. I have yet to try with the pizza, but I use a piece of parchment paper in skillet for tortillas and they don’t stick…

    1. Maybe if you bake it in the oven. I don’t think the skillet method would work to make it ahead of time.

    2. U can make the dough ahead of time. Actually I find my fatheat flatbread turn out better if refrigerated overnight

  2. Have you ever made this using all almond flour? I am leery of using coconut flour as I tried it once and didn’t care for the taste.

  3. Hi, would love to try this but a little confused. The comments reference flax, but I don’t see that in the ingredient list. Also you have noted rhat a serving is 4 slices, but in comments state this makes 2 servings. Can you please clarify what you are providing the nutrition info for? Is that 391 cal/29 fat/10 carb/22 pro for the entire pizza or half? Thanks so much

    1. The nutrition facts are per slice. This is very rich. I normally eat half of it with a side salad.

      As far as the flax I used to have this as 1/4 cup each coconut flour, almond flour, and ground golden flax. Since then I’ve modified the recipe. If you’d like to use the flax version it works great but I just prefer the taste of more almond flour in this.

  4. I just put a circle of cheese on my grill, either sprinkle garlic or onion powder (or use real thing – carmelized onion though) and then sprinkle on some basil and add meat if you want. That’s it. The skillet browns the cheese and you just cut it and can pick it up. I can’t eat tomatoes, so I skip that.

    1. Not fresh. You can use bagged shredded mozzarella or a block cut into cubes for the dough. I just use whichever brand is on sale, sargento, polly-o, etc.

  5. This recipe is the bomb! My first attempt was great. I substituted dairy with soy cheese and imitation cream cheese. Everything came together just as illustrated. Totally, yummy and so easy to make. Will be making this again, playing with seasonings and toppings. Thanks so much, Taryn!5 stars

    1. I used Classico. I think I purchased it at Shoprite which is a regional grocery store but it is sold in most stores.

  7. If I use all coconut flour do I need to add another egg? My daughter can’t have almond flour.
