This Keto Jello Recipe is a great recipe for anyone on a low carb diet. Made with natural ingredients this is a great option for the keto lifestyle and an easy sweet treat the whole family can enjoy.

Jello is such a fun food to eat. What I love about this keto jello dessert is that it’s also a sugar-free dessert that I can enjoy guilt-free. Whether you want to make this homemade jello for weight loss or just as a way to avoid food dyes, artificial sweeteners, and artificial flavors it will be a favorite in no time.

All you need is powdered gelatin plus the drink mix of your choice. With minimal net carbs, this easy keto dessert is a great way to curb any sweet tooth.

Ingredients

  • Cold water – Cold water is needed to help form the gelatin mixture. 
  • Gelatin powder – I use unflavored gelatin. 
  • Hot water – Helps to form the gelatin dessert. 
  • Sugar free drink mix powder – I use Ultima Replenishers brand because it is naturally sweetened with stevia and colored with plant based colors. This comes in different flavors.

How to Make this Keto Jello Recipe

Step One: Add the cold water to a medium-sized bowl.

Step Two: ​Sprinkle the gelatin mixture on top. Let it sit for 5 minutes.

Step Three: Pour the hot water over the bloomed gelatin.

Step Four: Whisk until all the gelatin is dissolved. If there are lumps, strain them out.

Step Five: Add the drink mix and whisk until smooth.

Step Six: Taste, and then add more drink mix if you want more flavor. You can flavor to taste at this point.

Step Seven: Pour the mixture into a glass storage container and place in the fridge until it is firm.

Top Tip💡

The texture of the jello can be varied by how much gelatin you add. Add more for a gummy texture or less for a soft set gelatin dessert.

Substitutions

  • Drink mix powder – The good news is that you can use other flavors each time you make this dessert for your low-carb diet. You can make a berry mixture or keep it simple with a sugar-free strawberry jello recipe. I also love a good lime jello! 

Variations

  • Add toppings – While toppings do change the carb and calorie count, they’re a fun way to give other family members options for flavors. Add some fresh strawberries, whipped cream, fresh fruit, or even a bit of sprinkles for so much fun and flavor. 
  • Lemon juice – Squeeze in a bit of lemon juice for a pop of citrus flavor.

Equipment

To make this jello for a low-carb keto diet, you’ll need to have a mixing bowl, whisk, measuring cup, and airtight container. 

Storage

Easy recipes like this make a large batch, so you’ll likely need to store leftovers for later. Make sure to have an airtight container with a lid, and keep the jello stored in the fridge. 

Freezing is not recommended.

Common Questions

What if my jello didn’t set up properly? 

​One of two things likely happened. The water and ingredients weren’t measured correctly, or the mixture didn’t get stirred all the way to dissolve all the powder. In order for the jello to firm up, the directions listed on the recipe card below need to be followed exactly. 

Can I use a keto sweetener? 

It’s really not necessary to add anything else to this jello mixture because the powder I recommend already has a natural sweetener in it. If you want you can add more sweetener to this sugar-free jello recipe, but be careful it doesn’t end up too sweet to enjoy. 

Can I make jello ahead of time?

Absolutely. This easy dessert recipe is perfect for prepping and making ahead of time. As long as you keep it stored in the fridge in an airtight container, it is fine to prep up to 3 days before serving.

What are the most popular jello recipes?

Strawberry and berry flavors are typically quite popular, but lime is a strong contender as well. The fun part about making jello is that there are dozens of flavor options out there to mix and match and try. This means that you’ll be able to keep this recipe handy and use it over and over again!

  • Sprinkle the gelatin on top. Let sit for 5 minutes.
  • Pour the water over the bloomed gelatin.
  • Whisk until the gelatin dissolves. Strain out any lumps.
  • Add the drink mix and whisk until smooth. Taste and add more drink mix if needed.
  • Pour into a glass storage container and refrigerate until firm.

Notes

Drink Mix – I tested this recipe using Ultima Replenishers drink mix. If you use another brand you may need to adjust the amount added.
Gelatin – For soft jello use 2-2.5 tablespoons of gelatin. For firmer jello, like jigglers that hold their shape, use 3-4 tablespoons of gelatin.

    1. I was under the impression that I could eat this “jello” at bedtime & it would work it’s wonders, melting the fat, so to speak. Guess I was wrong.

  2. I don’t understand what a drink mix powder is. can we just replace it with liquefied fruit which is healthy. I have s blendtec and can make fruit into juice. I’m so confused as to what a drink powder mix is. I don’t want junk in my food nor do I have that on hand

    1. Erin, the powder I recommend is all natural. It is not junk. You can see info here: https://amzn.to/4cXLrr2 They use organic sweeteners, natural flavors and colors, plus vitamins and minerals.

      If you would like to try this with fruit juice you may but it might not be keto. There are plenty of recipes that would suit your preferences.
