Ingredients
Shredded chicken - You can use leftover cooked chicken to save on time.
Cauliflower rice - Buy this premade to save prep time. I normally use frozen. Just thaw and drain it well.
Broccoli florets - You can dice by hand or use a food processor.
Cheddar cheese - This is my favorite type of cheese for flavor.
Cream cheese - Helps to add creaminess to the dish. It mixes in easiest at room temperature.
Mayonnaise - Keeps the dish nice and creamy.
Sour cream - Adds flavor and texture.
Half and half - Adds richness to the dish. Chicken broth or heavy cream and be subbed for half and half.
Garlic powder - We love a hint of garlic in just about any savory dish.
Onion powder - Onion powder gives a nice flavor.
Salt and black pepper - You can season to taste.
How To Make This Keto Chicken and Rice Casserole
Step One: Preheat the oven to 350 degrees. Put the chicken, broccoli, and cauli-rice in a large bowl.
Step Two: Mix the sauce ingredients together. Add to the cooked chicken, cauliflower rice, cheese, and broccoli.
Step Three: Spread the mixture into a greased 9X13 pan.
Add the rest of the shredded cheese on top.
Step Four: Put the baking dish in the oven and bake for 30 minutes.
Variations
Use leftover chicken - Don't complicate or reinvent the wheel here. Use any leftover chicken that you have on hand to save time. I love using leftover rotisserie chicken for this easy casserole. You could also cook up chicken breast or chicken thighs to use the meat.
Use white rice - If you're not on a low carb diet, you can use cooked white rice in place of cauliflower rice.
Add toppings - The cheese on top is delicious, but you can also add parmesan cheese, chopped green onions, or crispy bacon for more flavor, too. Just be sure that anything extra that you're adding to keto casserole recipes sticks to the basics of the ketogenic diet.
Make it spicy - Adding a little bit of chili powder or cayenne pepper is a simple way to add heat to this casserole dish.
Common Questions
What is the quickest way to shred cooked chicken?
I've found that cooking it properly makes all the difference when it is time to shred it. I normally cook boneless skinless chicken thighs in the Instant Pot on high pressure for 15 minutes. Let the pressure release naturally. After that, they fall apart.
Is it hard to make my own cauliflower rice?
It's not hard, but it does take time. The easiest way to make riced cauliflower is to use a food processor. (do you see a trend here?) The food processor will dice up the cauliflower so that it's small and ready to add to the rest of the dish.
Can I freeze this dish for later?
I think that this simple casserole recipe is best served fresh. Freezing can change the texture of the cauliflower rice, causing it to be mushy when it's unthawed.
How do I store leftovers?
When it comes to making this low-carb weeknight dinner, you'll likely have leftovers. Let them cool down to room temperature, and then store them in an airtight container. When it's time to eat, just pop the leftovers in the oven or use the microwave. Reheat until thoroughly warmed all the way through.
What side dishes pair well with casserole recipes?
It can be hard to find side dish options for casseroles since they're already a hearty meal. Keeping it simple with a side salad is going to be your best option.
You can also steam veggies or pair this simple dish with fresh berries. Keep the options easy and simple to round out the meal.
