These Dairy Free Egg Bites are a great way to make a copycat Starbucks version for a fraction of the cost. Perfect for quick breakfasts, and a great addition to your morning prep. Use the oven, or the air fryer, to cook up these high protein egg bites – whatever works best for busy mornings.

What I love about this egg bite recipe is that you just need a few simple ingredients and an egg bite mold to get started. They’re the perfect balance of protein and such a fun breakfast idea. They’re a healthy breakfast that you can grab as you’re running out the door! 

Being able to use the oven or the air fryer makes for quick cooking time and a fantastic way to not slow down your morning routine. The next time you need an easy way to make a low carb snack or morning jumpstart, these dairy-free egg bites are the absolute best.

Ingredients

  • Eggs – The star of the show for making these copycat Starbucks egg bites.
  • Coconut oil – Adds a healthy fat and gives the eggs creaminess.
  • Diced vegetables – I like to use chopped broccoli and tomatoes. But diced green onions, bell pepper, mushrooms, and chopped spinach all work. 
  • Cooked meat – You can use bacon pieces, ham, and sausage. 
  • Salt and pepper – For flavor.

How to Make Dairy Free Egg Bites

To make in the air fryer, preheat the air fryer to 400 degrees.  Spray the egg mold with non-stick cooking spray. To bake, preheat the oven to 350 degrees.

Step One: ​Blend the eggs, coconut oil, and seasonings.

Step Two: Divide the meat and veggies evenly into the mold. You can add as much or as little as you like.

Step Three: ​Pour the egg mixture over the fillings.

Step Four: Cook the egg bites.

 

For the air fryer, cook for 10-12 minutes. Check the internal temperature and make sure that the baked egg cups are between 165 and 185 degrees. Let them cool for 5 minutes in the mold, then remove and enjoy. 

For the oven, cook for 20-25 minutes. Check the internal temperature and make sure that the baked eggs are between 165 and 185 degrees. Let them cool for 5 minutes, then serve and enjoy.

Top Tip💡

Variations

  • Fillings – The great thing about making these is that you can add any type of meat or veggies that you want. Mix and match and see what combination works. 
  • Spice – Love garlic powder or onion powder? Add some. Fresh herbs are great. Or add a little bit of cayenne pepper or red pepper flakes for heat. 
  • Meat free – If you don’t want to add meat, you don’t have to. 
  • ​Vegetable free – You can also leave out the vegetables and add more meat and some cheese. (although cheese would be adding dairy, so be aware of that variation if you have to eat dairy-free)
  • Egg whites – You can use only egg whites if you prefer. Or you can use a whole egg plus some whites.

Equipment

To make these hand-held mini omelets, you’ll need to have egg molds. I use a silicone mold that is air fryer safe. Alternatively, you can use a well-greased muffin pan. A muffin tin is a better option for big batches for weekly meal prep. You’ll also want to have a large mixing bowl and a measuring cup. A cutting board is a good idea if you’re dicing or chopping up meat and vegetables. 

Storage

These egg bites are great for leftovers. Store any that remain in an airtight container, and keep them in the fridge. Reheat in the morning in the microwave until heated all the way through, and enjoy. You can also freeze them for later by storing them in a freezer-safe container. For quicker mornings, thaw them overnight in the refrigerator. This is a great way to meal prep and get ahead.

What is the best way to eat these mini egg bites?

They’re perfect for grabbing and eating, but you can also serve them on a plate. If I have the time to sit and enjoy, I love pairing them with cottage cheese and salsa. They have the same flavor that a regular omelet would, just in mini form, so adding all the favorite omelet toppings also makes them taste so good.

Why are my egg bites rubbery?

The egg bites, if cooked properly, should be soft and fluffy. If they are hard or rubbery, they’ve been overcooked. Make sure to follow the cook times listed below on the printable recipe card for the best outcome.

Ingredients
 
 

  • 3 eggs
  • 2 tbsp refined coconut oil
  • 1/2 cup diced vegetables (spinach, tomatoes, onions, etc.)
  • 1/2 cup cooked meat (sausage, ham, bacon, etc.)
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

    1. In a regular muffin pan? About 3. You can double or triple the recipe to make a bigger batch. If you click the number next to servings in the recipe card you can adjust it and it will calculate all the new ingredient measurements for you.
