Preheat oven to 350. Grease a 9x13 casserole dish.
Put the cauliflower rice in the bottom of the dish.
Put the chicken on top of the cauliflower rice.
Combine the sauce ingredients in a blender.
Spread on top of the chicken.
Top with mozzarella.
Bake for 30 minutes or until hot and bubbly.
Optional: Broil for 2-3 minutes to brown the cheese topping. Watch closely so it does not burn.
Notes
To Reheat: Warm the leftover chicken casserole in the oven or heat it in the microwave until hot. To Freeze: Place the leftovers in a freezer-safe container and freeze for up to 1 month—Thaw before reheating.
