Roasted Cabbage Steaks with Balsamic are a delicious way to get more vegetables into your diet. They only take a few minutes to prepare and cook quickly to help you get dinner onto the table in no time.
This Roasted Cabbage with Balsamic is one of my favorite easy side dishes to serve with dinner. Cabbage is extremely budget friendly and this entire side dish is just a couple dollars to feed a whole family.
Cabbage is a pretty underrated vegetable. Besides in coleslaw or on St. Patrick's Day I don't think many people eat it often.
Cabbage Nutrition
Cabbage is full of vitamins like vitamin K and vitamin C while being low in calories and fat. Have you heard of the cabbage soup diet? This is why. If you only eat a few hundred calories of soup each day, of course, you will lose weight but it's not very sustainable. I recommend adding in cabbage as a side dish instead of as your sole source of nutrition.
Balsamic Dressing on Cabbage
This balsamic dressing is also excellent on salad or chicken! Make a double batch and roast some chicken tenders in it as well for a complete meal.
Cooking Cabbage
Broiling the cabbage helps it to get crisp while the balsamic dressing thickens and glazes it. If you don't have a broiler just roast the roasted cabbage with balsamic on the top rack at the highest temp your oven allows.
This is also excellent chopped up and cold like a coleslaw. It has so much flavor from the charred bits. Don't be intimidated by the 'burned' look of this. The browned pieces are the best part!

Ingredients
- 1 large cabbage
- ¼ cup balsamic vinegar
- 3 tablespoon avocado oil
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1 teaspoon sea salt
Instructions
- Preheat oven to broil on high.
- Slice the cabbage into ¾ inch thick slices. Put on a rimmed baking sheet.
- Combine the vinegar, oil, and seasonings in a small blender. Blend until smooth. Drizzle over the cabbage steaks.
- Broil on high 10 minutes. Flip. Broil an additional 10-15 minutes.
