The summer and warmer months of the year always make me want to grill chicken thighs. I love being out on the patio, with a cold drink in hand, manning the grill.
Since cooking chicken on the grill is versatile, I’ll always add in some grilled vegetables like grilled asparagus or corn on the cob and some type of refreshing salad or side dish as well.
I like grilling chicken thighs, but you could easily do this recipe with chicken breasts, too. Have fun with the process and love the end result of tender and juicy chicken.
This boneless skinless chicken thighs recipe can easily be made for a large crowd and is a good recipe for a BBQ potluck. Serve with a few side dishes such as potato salad or Southwest Cauliflower Salad, pasta salad or Tajin Cucumber Salad and you’ll be set.

Ingredients
All you need are the following ingredients to get started. A simple mixture of common spices gives the grilled boneless chicken thighs great flavor. You’re going to love the ease of grilling this chicken dish.
Boneless skinless chicken thighs – These are great because there isn’t a ton of excess fat but just enough to keep the meat tender and juicy.
Garlic powder – Just a sprinkle goes a long way.
Onion powder – Adding onion powder is the perfect way to increase the flavor without increasing the sodium.
Salt and black pepper – To taste. A good rule of thumb is to use one teaspoon of kosher salt for each pound of meat.

How To Make Grilled Boneless Chicken Thighs
Step One: Combine the seasonings into a bowl.
Step Two: Rub the seasoning mix onto the chicken until covered. Preheat the grill.

Step Three: Place the seasoned chicken thighs on the hot grill grate in a single layer and grill for 8 minutes per side on medium heat.
The internal temperature should read 160 on an instant-read thermometer. The cooking time will vary a bit based on the thickness of the chicken. Let the chicken rest, covered with aluminum foil, for five minutes for extra juicy chicken.
Serve with your favorite bbq sauce.

Variations
Type of chicken – You can also make this recipe with chicken breast or chicken tenderloin. Bone-in chicken thighs also work but take longer to cook. If you have skin on bone-in thighs watch them closely on the grill so the fat from the skin doesn’t start a grease fire.
Marinate the chicken – Grab marinade ingredients and add to the chicken thighs. This boneless chicken thighs recipe tastes great with all different types of marinades. We love simple ingredients like extra virgin olive oil with lemon juice, soy sauce, or balsamic vinegar. Add brown sugar or a sugar free sweetener for a little sweetness. A dash of worcestershire sauce gives a lot of flavor to any chicken marinade.
Add olive oil – Rub a bit of olive oil or coconut oil on the outside of the chicken thighs before putting them on the charcoal grill. (or gas grill) This can help crisp up the skin a bit to get that golden brown look.
Seasonings – Even though I use garlic powder and onion powder, you can mix and match and change it up. Adding some cayenne pepper would kick up the heat, and even sprinkling on some Everything Bagel Seasoning would add a kick of flavor. You can even use a grilling rib with cloves or nutmeg added for a warm flavor.
Mustard – Rub the thighs with dijon mustard before adding the rub to boost the flavor and add some tang.

Storage
Store leftover chicken in an airtight container for 3-4 days in the fridge. It is easy to use leftover chicken for lunch. I normally warm it in the microwave and then toss on a salad or make quesadillas with low carb tortillas.
Common Questions
How do I know when chicken is done cooking on the grill?
Using a meat thermometer is the most accurate way to test the internal reading of the chicken. Insert the tip into the thickest part of the chicken thigh. As long as the reading shows 165 degrees, the chicken is done cooking and ready to remove from the grill.
If you are cooking bone-in chicken, be sure that you don’t put the meat thermometer near a bone, as it will give false readings.

Is it hard to grill boneless skinless chicken thighs?
It’s really not hard at all, but you do want to pay attention so that you don’t overcook them. I always have a grill pan ready so that I can remove the chicken the instant that it’s done cooking.
Cooking chicken is so easy to do and is a great way to eat fewer carbohydrates and fewer calories as well.
