After a busy day at work and taking care of the blog, I don’t usually have lots of time to cook and so I usually like to make a bunch of different dishes over the weekend and just eat them throughout the week. Anyone else love to batch cook? I tend to make five to eight different dishes that I can use during the week and alternate each day, or mix a couple of different dishes in one lunch box. I like to have things that are fast to make and quick to reheat because my boyfriend and I are always hungry after coming back home from work!
Today’s recipe was really fun to make because it just looks so pretty! This reminded me of the spiral ratatouille dish that my mother used to make. You can use any type of vegetables to make this cheesy chicken bake. You could use sun-dried tomatoes, bell peppers, spinach, kale or Swiss chard, eggplant or even sticks of asparagus! You can also alternate the cheese for any other kind. I bet a creamy goat cheese or sour cream would taste amazing!

Primavera Cheesy Chicken Bake
Makes 4 servings
1 zucchini
6 brown mushrooms
2 tomatoes
½ red onion
20 basil leaves
3 boneless skinless chicken breasts (800g/28oz)
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon garlic powder
½ cup crushed tomatoes
¼ teaspoon salt, black pepper, garlic powder, oregano, basil, parsley
1 tablespoon olive oil
200g/7oz mozzarella
Instructions:
Preheat the oven to 180C/350F.
Slice the zucchini, tomatoes, mushrooms and red onion. Slice the chicken breasts, about ½ inch thick, in a slightly diagonal angle so that you have slightly bigger slices of chicken. Sprinkle the salt and pepper all over the chicken slices.
In a baking dish, casserole or oven-proof skillet (I used a 10inch braiser), add the crushed tomatoes and all of the spices. Mix well in the skillet and spread around evenly.
Arrange, in alternating colors, slices of chicken, tomatoes, zucchini, mushrooms, red onion, and basil in a spiral over the tomato sauce all around the baking dish. Drizzle the olive oil all over the dish, sprinkle the garlic powder over and top with the mozzarella cheese.
Place in the oven and bake for 35 minutes or until the chicken, especially around the middle of the dish, is cooked through.
