You can make it a day or two ahead of time and pull it out of the fridge right before the party. This recipe makes 2 generous cheese balls. If one is enough you can half the recipe.

This would also be wonderful coated in roasted, chopped nuts such as pistachios. I love pistachios but we have a pretty serious pistachio allergy in my house so I don’t have them at home anymore.

My favorite recipes take about five minutes. I do love to bake and when I have a leisurely day on the calendar it is enjoyable for me to do it at a relaxed pace. But, life with four kids and a fifth on the way is busy. If I need to get dinner on the table or throw together a quick app five-minute recipes win. This really does take five minutes. All you do is mix together the softened cheese and roll it into a ball.

I ran out of fresh dill making this recipe. So the cheese ball I brought on Easter day did not have a coating. These do look prettier when rolled in extra dill or chopped nuts but it isn’t necessary. Wrap in plastic wrap to smooth the surface and to make transporting easier if you are bringing them to a get together.

16 oz low-fat cream cheese, softened ***

8 oz crumbled feta

8 oz shredded mozzarella

2 tbsp fresh dill, chopped

2 tbsp fresh dill, optional, to coat the cheese ball

*** I prefer the tang of neufchatel (low fat) cream cheese to complement the feta in this recipe but you can use full-fat cream cheese if you prefer.
