Ingredients

I wasn’t kidding when I said you only need 2 ingredients. Not only does it taste incredible, but it’s also not going to cost you a lot to make it either.

Sugar-Free White Chocolate Chips – I used ChocZero white chocolate chips because they melt really easily but other brands without added sugars should work.

Natural Peanut Butter – Make sure to choose one without added sugar. I use creamy peanut butter. If you want a little more texture in your fudge go ahead and use crunchy peanut butter!

How to Make Keto Peanut Butter Fudge

Step One: Melt the sugar-free white chocolate chips with the peanut butter in a microwave-safe bowl in the microwave. Stir every 30 seconds until melted.

Step Two: Pour the melted chocolate peanut butter mixture into a mini loaf pan that has been lined with a piece of parchment paper. Alternatively, you can grease a shallow pan very well with coconut oil.

Place the keto peanut butter fudge mixture in the fridge for 4-6 hours or overnight until it’s set.

Cut, serve, and enjoy! The nutrition facts are based on 16 servings. Since fudge is so rich a small piece should satisfy your sweet tooth. You can slice it into thin slices, or thick slices and then cut it into cubes. Store the low-carb fudge recipe in an airtight container at room temperature for a few days in the fridge for up to a month.

Variations

  • Crushed Peanuts – They will give the homemade peanut butter fudge a crunch and looks pretty too. Crush up ⅛ – ¼ cup and sprinkle on top.
  • Sugar-Free Chocolate Chips – Use some sugar free chocolate chips in any flavor and add them to the top of the fudge. Dark chocolate will look fabulous and help you with your craving for chocolate.
  • Salt – A little bit of flaky salt would be a nice touch and give you some added flavor. If you use salted peanut butter, you may want to skip extra salt, so it’s not too much.
  • Vanilla – Add a teaspoon of vanilla extract to boost the flavors.
  • Nuts – Pecans or walnuts are great options to add to the fudge too.
  • Peanut Butter Cups – Chop some sugar free keto peanut butter cups and mix them in or sprinkle on top.
  • Truffles – Add a few ounces of cream cheese for a softer set. Then just chill, scoop, roll into balls, and coat with powdered sweetener. These are great fat bombs!

Common Questions

Is All Peanut Butter Low-Carb? Is Peanut Butter Keto?

No, not all peanut butter is going to work on a keto diet. It’s vital to check the labels and choose a peanut butter that is all-natural. It should only be made with peanuts. If you find some that have peanuts and a little bit of salt, that’s okay too.

Peanut butter becomes a problem when it’s filled with sugars and other ingredients that aren’t keto-friendly. As long as you read the labels, you shouldn’t have any trouble finding a sugar free peanut butter that will work for you.

Can I Use Different Kinds Of Nut Butter?

Sure! If you have a peanut allergy or ran out but still have a craving for fudge, you can totally swap it out. Use any of your favorite keto-friendly nut butter and follow the same directions. The flavor is going to taste different, so you are going to want to consider that when deciding what to use. Almond butter or cashew butter would be pretty tasty options.

Additionally, you can swap the nut butter for seed butter as well. Sunflower seed butter is another great option to consider.

Is It Okay To Make The Fudge On The Stovetop?

Yep, if you’d rather make it on the stovetop instead of the microwave, that’s fine. BUT you need to use a double boiler and stir it continuously over low heat. You don’t want it to burn, or it will ruin the fudge.
