In a large bowl, use an electric mixer to combine the batter ingredients. The mixture will be crumbly, but keep mixing and you will begin to see the dough come together in clumps. That's the consistency you're looking for. Stir in chocolate chips. Press the dough onto a rimmed baking sheet. Bake for 20 to 25 minutes or until golden brown and set. Cool.
Meanwhile, make the chocolate pudding. Combine all the ingredients except the gluccomannan in a blender. Blend until smooth. Sprinkle the gluccie on top. Blend until smooth. Let rest for a few minutes. Blend again. It should start thickening. Transfer to the a bowl and put in the fridge to set.
Make the whipped cream. Whip the cream in a medium bowl with an electric mixer until peaks form. Add the sweetener and mix until combined.
Break the cookie into bite sized pieces. Put 1/3 in the bottom of a trifle dish. (You can make this into individual parfaits in small cups if you choose). Spread 1/2 the pudding on top and then 1/2 the whipped cream. Repeat with cookies, pudding, then whipped cream. Sprinkle the remaining cookies on top.
