Add the Brussels sprouts, coconut oil, and garlic to a foil-lined baking sheet. Put in the preheated oven.
Stir after the first ten minutes so that the Brussels sprouts get coated in the melted coconut oil.
Roast for 30-40 minutes or until tender and golden. Season with salt.
Notes
Ideas & Substitutions:You can sub in another fat source if you'd like as long as it can handle high heat. Some other good choices are bacon fat and avocado oil.Replace the garlic with onions or shallots.After cooking drizzle on lemon juice.
