boneless skinless chicken thighs
about 2 lb, pounded flat if necessary

bacon

oz
cheddar cheese
cut into thumb-sized pieces

smoked paprika rub

Instructions
Preheat the oven to 400. Season chicken as desired.
Wrap each chicken thigh around a piece of cheddar. Wrap tightly in a piece of bacon. Stretch the bacon as you wrap it around the chicken.
Place on a baking sheet. Bake for 35-45 minutes until the bacon is crispy and the chicken is fully cooked.
If any of the cheese melted out just spoon it over the chicken.
