Raw Carrot Salad is light & refreshing with a simple vinaigrette, cranberries, & pecans. Ready in just 10 minutes it is a great side anytime!

Ingredients

carrots
peeled and shredded
1
small apple
peeled and shredded

tablespoon
olive oil
2
tablespoon
fresh lemon juice
½
teaspoon
salt
¼
teaspoon
pepper
¼
cup
dried cranberries
¼
cup
chopped pecans
Instructions
Combine the carrots and apples in a large bowl. Toss to mix.
Combine the dressing ingredients. Stir, shake, or blend until smooth.
Drizzle the dressing over the salad and mix well. Let stand for 5 minutes.
Top with the cranberries and pecans. serve.
Notes
Prep Time:
The 10 minutes of prep time assumes you will be shredding the carrots in a food processor. If you shred them by hand it will take longer.
