sliced into chunks

Instructions
Heat oil in a skillet to medium high.
Season the lamb with salt and pepper.
Brown the lamb in the skillet for 2 minutes per side. Remove the lamb and set aside.
Add the onions, carrots, celery, and garlic to the skillet. Cook until softened.
Deglaze the pan with the red wine.
Add the lamb back to the skillet and add the beef broth and rosemary.
Cover and simmer for 25 minutes. Add the mushrooms. Simmer for another 5 minutes so they soften.
Stir in the xanthan gum. Simmer until thick.
