Heat water to boiling. Stir in the sweetener until completely melted.
Add the extracts. Stir in the xanthan gum. Let cool to room temperature.
Strain through a fine-mesh sieve. If you would like the syrup thicker add ¼ teaspoon of xanthan gum at a time until thickened.
To Reheat: warm in a saucepan over low heat or in the microwave for 10-15 seconds until hot. To Freeze: keep in an airtight container in the freezer for up to 4 months. Thaw in the refrigerator overnight before using.Notes on Sweeteners:
