Preheat the oven to 400. Spray a casserole dish with cooking spray. Add the cooked chicken.
Top with the vodka sauce, parmesan cheese, and chunks of fresh mozzarella.
Bake until hot and bubbly. About 25-30 minutes.
Optional: You can serve this on top of baby spinach. The heat from the sauce wilts the spinach.
To Reheat: warm up the leftovers in the microwave until hot or in the oven for 10-15 minutes. Once it’s hot, it’s ready to serve. To Freeze: you can either freeze a large batch or opt for individual servings. Keep it airtight, and it will last for two months in the freezer. Substitutions: you can swap the chicken for sausage.
