Raspberry Lemonade Popcorn
This will quickly become your favorite snack. It is sweet and zesty with the flavors of lemon and raspberries in every bite. It reminds me of a warm summer day sipping lemonade on the porch.

Ingredients

air popped popcorn
⅓

Joy Filled Eats Sweetener (or see alternatives in recipe notes)

teaspoon
lemon zest
⅓
cup
freeze-dried raspberries
broken into small pieces

Instructions
Put the popped popcorn and freeze-dried raspberry pieces in a large bowl.
Melt the sweetener in a small saucepan over medium-low heat. Remove from heat and add the lemon zest.
Pour the lemon syrup over the popcorn. Mix well. Spread on a waxed paper lined baking sheet to cool.
Notes
The sweetener melts without adding any other ingredients to the pot.
Notes on Sweeteners:
I use my own
blend of xylitol, erythritol, and stevia
in my recipes. This is twice as sweet as sugar. It is comparable to
Trim Healthy Mama Gentle Sweet
and
Truvia
.
To sub in

use 1.5 times the amount of sweetener called for.
To sub in

use half the amount of sweetener called for.
Substitutions will work in most recipes. They may not work in candies, such as caramel.
