Combine the eggs with 2 tablespoons of cottage cheese, salt, and pepper in a blender. Blend until smooth.
Heat a 9-inch frying pan over medium heat. Spray with cooking spray. Pour the egg mixture into the pan. Cook for 5-6 minutes until the eggs are mostly set.
Combine the remaining cottage cheese and any other fillings you desire. Add to half of the omelet. Flip half over the cover filling. Serve immediately.
