Combine the eggs with 2 tablespoons of cottage cheese, salt, and pepper in a blender. Blend until smooth.
Heat a 9-inch frying pan over medium heat. Spray with cooking spray. Saute the spinach for about 15-30 seconds until it just starts to wilt. Remove from the pan and set aside.
Pour the egg mixture into the pan. Cook for 5-6 minutes until the eggs are mostly set.
Add the spinach and feta to half of the omelet. Flip the other half over the cover filling. Serve immediately.
