Preheat air fryer to 400. Spray basket with cooking spray.
Rub pork with oil and season with salt and pepper.
Place pork into the air fryer basket. Cook for 30 minutes. Flip. Cook an additional 20 minutes or until 135-140 when checked with an internal thermometer. (Because a crust forms on the outside of the pork roast the internal temp will continue to rise 10-15 degrees when resting).
Let rest for 10 minutes before slicing.
Notes
Nutrition: The nutrition facts are for ⅛th of the 2.5lb pork roast.Pork Temperature: The USDA recommends that whole cuts of pork are cooked to 145. If you air fry your pork until it reaches 145 it will end up at 155-160 and dry. I really recommend removing it from the air fryer at 135-140 and letting it rest for 10 minutes. After that resting time, it should be 145 and very moist.
