This simple cucumber salad recipe is fast and easy to make! With just 3 ingredients but a ton of flavor this keto cucumber salad is certain to be a family favorite.
Clean and slice the cucumbers. You can use a slicer or slice by hand, whatever works best for you.
Mix together the Tajin seasoning and the mayonnaise into a bowl.
Add the sliced cucumbers to the mixture and fold them together until the cucumbers are covered.
You can serve right away or set it in the fridge and let it cool.

Nutrition: This keto cucumber salad has 8 servings. A serving is approximately ½ a cup. There are 1.7 NET carbs per serving.Sodium: Tajin seasoning is high in sodium. If this is a concern for you I recommend buying their low sodium seasoning.Mayo: If you are serving this immediately use ¾ cup of mayo. If you are making ahead use ½ cup. The cucumbers release water which will this the mayo. If you add too much it can become soupy the longer it sits.Substitutions: If you don't want to use the Tajin seasoning, just use your favorite seasoning in its place. If it does not have salt add some to taste. Lemon pepper seasoning is also great in this salad. To Store: Keep in an airtight container and store in the fridge for up to 3 days. Optional: An optional add-in is cherry tomatoes which add a fun pop of flavor and color. I add them in whole but you can slice them in half, too.
