Chocolate Chip Shortbread Cookies – Low Carb THM S

Dough Ingredients:

Chocolate Coating:

  • 3 oz sugar-free chocolate chips OR
  • 3 oz bar 85% chocolate and 2 tbsp finely ground Trim Healthy Mama Gentle Sweet or my sweetener


  • Preheat oven to 350.
  • Next, combine the first 6 dough ingredients in the food processor and pulse until a uniform dough forms. Stir in the chocolate chips.
  • Divide into 16 balls and put on a parchment-lined baking sheet. Press down with your fingers.
  • Bake for 16-18 minutes or until lightly browned around the edges. Cool completely.
  • Melt the chocolate in the microwave or in a double boiler. I melt chocolate in the microwave stirring every thirty seconds. Add the sweetener if you are using 85% chocolate. Dip the cookies halfway into the chocolate. Let the excess drip off and set them on waxed paper to harden.


I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.

To sub in Swerve use 1.5 to 2 times the amount of sweetener called for.
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
Substitutions will work in most recipes. They may not work in candies, such as caramel.
