Slow Cooker Pork Tenderloin

- 2-3 lb pork tenderloin (2 pack)
- 4 cloves of garlic chopped
- juice of one lemon
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1/2 - 1 tsp glucomannan optional, or other thickener for the gravy
Put the pork in the slow cooker. Add the garlic, lemon juice, olive oil, salt, and pepper. Give it a quick mix. Cover and cook on low 3-4 hours until the pork is 155 degrees. Remove from the crockpot and let it rest. While resting it will continue cooking to 160.
Sprinkle the glucomannan over the cooking liquid. Whisk it in. Turn the crock pot to high and whisk occasionally while the gravy thickens. When the gravy thickens slice the pork and serve.
