Ingredients

Chicken Ingredients:

  • 2 pounds chicken tenders
  • 1 tsp cumin powder
  • 1 tsp garlic powder
  • 1 tsp salt

Salsa Ingredients:

  • 1 1/2 cups black beans drained
  • 1 1/2 cups frozen corn thawed
  • 1 1/2 cups tomatoes chopped
  • 1/2 cup onion chopped
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp avocado oil or other mild tasting oil
  • 1 tsp salt

Instructions

  • Rub the chicken tenders with the spices.
  • Heat a large skillet over medium heat. Spray with cooking spray. Add the chicken tenders and cook for about 4-5 on each side until browned and cooked to 160 degrees on a meat thermometer. Transfer to a serving platter.
  • Meanwhile, stir together the ingredients for the salsa. Spoon on top of the cooked chicken. Serve.
