Skillet Basil & Tomato Meatballs are a perfect one pan thirty-minute meal. They are moist, flavorful, and kid approved.

This was another night I had no clue what I wanted to make for dinner. At 5 pm. I had ground turkey, a head of cauliflower, and some fresh tomatoes. I attempted a low carb shepherds pie once and it was delicious but it was an appalling gray color. Some day I’ll redo it for the blog but today I wanted something simpler. An all in one pan skillet dinner sounding perfect.

I looked around on Pinterest for some inspiration and saw these Skillet Turkey Meatballs with Lemon Rice. With a few changes to make them low carb, grain free, and Trim Healthy Mama friendly and utilize the ingredients I had on hand dinner was on the table. They came out perfect. Considering the two youngest don’t eat much the fact that hubby, myself, and the two oldest kids polished off the rest of these was impressive.

The cauliflower took on the flavors of the meatballs. Next time I may try to squeeze more cauliflower into the skillet. This was half of a large head. Or I may just need to buy a bigger frying pan.

Skillet Basil & Tomato Meatballs – Low Carb, Grain & Gluten Free, THM S

Ingredients:

2 lbs ground turkey

1 cup grated parmesan cheese

1 egg

1 tbsp basil pesto

1/2 tsp salt

1/2 tsp pepper

1 large tomato, chopped

4 cups chopped fresh cauliflower

1/2 cup chicken broth

2 tbsp chopped fresh basil

Instructions:

Combine the ground turkey, cheese, egg, pesto, salt, and pepper. Mix well. Fold in the chopped tomato. Form into 14 large meatballs.

Heat a large skillet over medium high heat. Spray with cooking spray. Brown the meatballs on all sides.

Add the cauliflower and chicken broth. Cover. Simmer on medium for 6-8 minutes or until the meatballs are 160 degrees on a meat thermometer and the cauliflower is tender.
