Skillet Basil & Tomato Meatballs are a perfect one pan thirty-minute meal. They are moist, flavorful, and kid approved.
This was another night I had no clue what I wanted to make for dinner. At 5 pm. I had ground turkey, a head of cauliflower, and some fresh tomatoes. I attempted a low carb shepherds pie once and it was delicious but it was an appalling gray color. Some day I'll redo it for the blog but today I wanted something simpler. An all in one pan skillet dinner sounding perfect.
I looked around on Pinterest for some inspiration and saw these Skillet Turkey Meatballs with Lemon Rice. With a few changes to make them low carb, grain free, and Trim Healthy Mama friendly and utilize the ingredients I had on hand dinner was on the table. They came out perfect. Considering the two youngest don't eat much the fact that hubby, myself, and the two oldest kids polished off the rest of these was impressive.
My 8-year-old daughter said, "Mom, thank you for the delicious dinner." She may have gotten extra dessert.
The cauliflower took on the flavors of the meatballs. Next time I may try to squeeze more cauliflower into the skillet. This was half of a large head. Or I may just need to buy a bigger frying pan.
