My family loves dips. As far as condiments go, only my oldest son is a big ketchup eater but all of us love a creamy ranch or onion dip. I love how a simple dip can make a boring piece of raw broccoli or stalk of celery irresistible.
When it's getting close to dinner time and my kids are hungry early they are always welcome to break out the raw veggies and snack on those before the meal begins. It helps them to eat more vegetables and me to cook dinner without the chorus singing, "Mom, I'm hungry."

Prep Three Recipes at Once!
I also use a variation on this Roasted Red Pepper Dip recipe in my Chicken Zucchini Casserole and my Creamy Garlic Salad Dressing. You can make all three, one after the other, without washing the food processor in between. That is my kind of food prep.
Keto Chips?
Before anyone asks the chips shown are Protes Chips. But, I'm going to be honest with you and say that they aren't my favorite. I got some in my Keto Krate but I don't think I'd buy them. But they worked nicely as a prop for my Roasted Red Pepper Dip photos.

This is a delicious dip with a great consistency. It has way too much raw garlic in it for me however - it tastes great with only 3 or 4 cloves.

I made this as an appetizer for a dinner party over the weekend, and it was a total hit with everyone! Thanks so much for sharing!

Will this still be okay without the xanthan gum? 😖 I realized I don’t have any.
Taryn says
Yes, I think so. It just helps thicken it.

What are the servings and carbs
Taryn says
A serving is 1/12th of the recipe. The nutrition box is below the recipe. I did not measure it out but this makes about 3 cups so about 1/4 cup per serving.
