I’m getting over the flu. Awful. I know. I was really wanting something cold and refreshing today and I’ve been craving berries. Maybe my body knows it needs vitamin C or some other nutrient in them. Or maybe it’s just that berries are yummy.
I am a fan of the new Trim Healthy Mama cookbook but I don’t like drink recipes that call for tons of ingredients (or many specialty items). I pulled my THM cookbook out this afternoon and put it away after realizing I didn’t have all the ingredients for the recipes I was interested in.
Instead, I whipped this up to satisfy my berry craving. This would be excellent on a hot summer night but is delicious any time (right now it is dreadfully cold in the northeast and I still enjoyed it immensely).

1/2 cup frozen strawberries, partly thawed
1/2 cup frozen raspberries, partly thawed
1/3-1/2 cup almond milk
5 ice cubes
5 drops lime juice (I use the refrigerated squeeze bottle kind)
Gentle sweet (or my copycat recipe) to taste – I use about 2 t. but I like this a bit tart
Directions: Partly thaw berries by leaving them on the counter for awhile or by microwaving for a bit (my microwave takes about a minute to partly thaw them). Combine 1/3 cup almond milk and all the other ingredients in the blender. Start with 2t. sweetener and add more if you’d like it sweeter. You may need to add a bit more almond milk to get the right consistency.
(I’ve had this blender since we got married 12.5 years ago and it is still going strong. It’s not as powerful as a vitamix but is a heck of a lot cheaper. This is a great option if you need a new blender and your budget is under $50).
