The only way I could think to improve this classic was to top it with bacon, sour cream, and extra cheese. Loading it with toppings really did take it to a whole new level.
I made my soup in my Instant Pot in under 20 minutes. You can definitely make this in a pot on the stove instead. The easiest way to puree soup is with an immersion blender. No messy transferring of hot liquids, just blending right in the pot.
Step 1: Cook the broccoli in the broth.
Step 2: Puree the broccoli with the stock and cream. Add the cheese.
Step 3: Stir until the cheese melts. Put into bowls. Add toppings and enjoy.

- 2 heads of fresh broccoli , chopped (about 8 cups)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 tsp salt
- 1/4 tsp pepper
- 6 slices of bacon , cooked until crisp and chopped
- 1/4 cup shredded cheddar cheese
- 6 tbsp sour cream
- Instant Pot: Add the metal rack, broccoli, and broth. Cook on manual, high pressure, for 3 minutes. Do a quick pressure release. Remove the rack. Add the cream and seasonings. Puree until smooth with an immersion blender (Or transfer to a regular blender and then transfer back to the pot). Add the cheese and stir until melted. Ladle into bowls and top as desired.
- Stove Top: Add the broccoli and broth to a large stock pot. Cook medium-high, covered, for about 10-15 minutes until the broccoli is tender. Add the cream and seasonings. Puree until smooth. Add the cheese and stir until melted. Ladle into bowls and top as desired.
