I love this keto coconut flour mug cake recipe because it’s the perfect serving size. Whether I’m having chocolate cravings or just want to indulge myself with a sweet treat, this simple cake batter in a mug is the best.

Just keep in mind that if there are little mouths in the house, they’re going to be fighting you for a few bites as well. You might as well whip up one for them as well so you can enjoy it without interruption.

Ingredients 

Butter – I use salted butter when baking. I find it easier to just keep one type of butter in the house. If you do only have unsalted butter that’s fine. Just add a teeny tiny pinch of salt.

Coconut flour – The hint of sweetness that comes from coconut flour is delicious! I use almond flour in a lot of my recipes but coconut flour is quite a bit cheaper so it’s great to be able to use it on it’s own as well. In addition, it is perfect for anyone needing a nut-free option.

Sour cream – Using sour cream adds creaminess and moisture to the cake as it cooks in the microwave. 

Egg – The egg is the main binding agent that is used for the rest of the ingredients. 

Joy Filled Eats Sweetener – This is my go-to sweetener because it’s simple and yummy. 

Vanilla – A hint of real vanilla extract is always welcomed. 

Baking powder – Adding the baking powder helps to give the cake a boost of fluffiness.

How To Make Keto Coconut Flour Mug Cake

You’re going to love how simple keto mug cake recipes are! They’re perfect for a fast dessert when you’re craving something easy and sweet.

Step One: Add all the ingredients into a microwave-safe mug and stir.

Step Two: Add the mug and mixture into the microwave and heat for 1.5 minutes. The mixture to look like a cake and not be wet.

Variations

Keep in mind that any substitute that you do can change the fact that it’s gluten-free or low carb. They may also increase the calorie count and carb count per serving as well. 

Make a new flavor – You can easily make a lemon mug cake or a vanilla mug cake by adding extract or even a tad bit of lemon zest. You can even sprinkle in some cocoa powder to give a chocolate flavor and look.

Add berries – We all know that desserts and cakes taste great with fresh berries! Topping with strawberries, blueberries, or other berries creates a light and fresh texture and taste. I would refrain from using frozen fruit as it tends to bleed onto the cake as it thaws.

Top with whipped cream – No matter if you want ice cream or whipped cream, add either (or both!) to the top! Sugar free whipped cream is my favorite!

Add nuts – Looking to add some protein? Adding a scoop of peanut butter or topping with crushed almonds or peanuts can be a great way to accomplish just that. You can even use nut butters such as peanut butter or almond butter for a healthy topping.

Add sugar free chocolate chips – Sprinkling on some sugar free chocolate is a great way to kick up the sweetness while still keeping this dish sugar free. Mix them in to make a keto chocolate mug cake recipe easily! Or try this Keto Chocolate Chip Mug Cake.

Coconut oil – Sub in coconut oil for the butter and coconut cream for the sour cream for an easy dairy-free option.

Cinnamon – Add half a teaspoon of cinnamon for an amazing cinnamon keto coconut flour mug cake.

Common Questions

Can you bake this mug cake in the oven?

Sure. This is about the size of a cupcake so I recommend a similar baking time. It will take about 20-25 minutes at 350.

What other sweeteners can be used in this keto coconut flour mug cake recipe?

Any natural sweetener will work just fine, I have suggestions in the recipe card. I also like using monk fruit sweetener as well.

Why is my mug cake dry?

You may have cooked it too long in the microwave if the texture is dry. As long as you’re measuring out the ingredients and paying attention to the cooking time, you should end up with a nice, moist cake for one.

  • Mix well in a microwave-safe mug.
  • Microwave for about 1.5 minutes until fluffy and moist but not wet.

Notes

Nutrition: this single-serve mug cake has 4.7 NET carbs.
Prep: if your butter is cold simply microwave it in the mug for 15 seconds before adding the other ingredients.
To Reheat: microwave for about 10 seconds.
To Freeze: place the mug cake in an airtight container and freeze for up to 1 month. 
Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  2. I did tweak this just a tiny bit. I used melted coconut oil instead of butter, and banana extract instead of vanilla. This was absolutely spectacular! I topped this with keto chocolate ice cream and peanuts. Next time I make this cake, I will be using pineapple flavored extract.
