Could a two ingredient recipe ever be more delicious? I doubt it. These low carb keto Bacon & Brussels Sprout Kebabs were a hit with my entire family.
I don't remember the first time I had roasted Brussels sprouts but whenever that happened I was hooked. I don't mind the frozen variety but roasted fresh sprouts are so much better. Roasted in bacon drippings makes them even better. If you've never tried fresh Brussels sprouts give them a go. You will be pleasantly surprised.
The trick to this recipe is using thick sliced bacon. If you use thin bacon it will cook faster than the sprouts. If thin bacon is your only option layer it two layers thick before weaving it on the skewers. I buy my thick bacon at Costco. 3 pounds has been $9.99 lately which is a great price for bacon.
Bacon & Brussels Sprout Kebabs - Low Carb, Grain Free, THM S
4 pieces thick cut bacon (or 8 pieces of thin bacon doubled up)
14 large fresh Brussels sprouts, cut in half
Thread the bacon and Brussels sprouts on skewers. Bake at 400 for 35-50 minutes or until the bacon is crisp and the sprouts are tender.
