Disclaimer: I have never tried the official THM baking blend. I decided I would order it if I couldn’t come up with a substitute that I like. But I like this one.
You do need oat fiber which is hard to find in local stores. I order it from iherb. It is only $3.49 a pound. This ingredient stretches the others so that the baking blend isn’t nearly as expensive as using straight almond flour. I’ve tried my baking blend in microwave muffin in mug recipes and it worked really really well. I’m working my way through the new Trim Healthy Mama cookbook and tweaking as I go. So far I’ve loved everything except the Cry No More Brownies. I could still taste the okra even after they were chilled. But the texture was perfect. With this homemade baking blend. Combine 1/2 cup each of almond flour, coconut flour, oat fiber, and ground golden flax. Add 1 tsp. gluccomannan.
