I did it! I saved the okra brownies! I’m one of the mamas who could totally taste the okra no matter how long I blended it or how long I chilled the Cry No More Brownies. I couldn’t bear to throw them out so I stuck them in the freeze hoping to figure something out. My idea worked! I softened cream cheese and mixed that with brownies, cocoa powder, and my homemade gentle sweet. I mixed with a fork until smooth and scooped out balls with a small cookie scoop. They taste just like truffles! The okra flavor is completely gone.
Leftover Cry No More Brownies (I had 3/4 of the batch left)
1 8 oz package cream cheese
2 T gentle sweet (my recipe here: https://mercyandgratitude.wordpress.com/2015/10/10/trim-healthy-mama-gentle-sweet-substitute/)
4 T cocoa powder
Mix and mix some more until the color is a uniform brown with no white chunks.
Scoop with a small cookie scoop onto wax paper. Chill in the refrigerator. Store in the fridge or freezer.
