Lunch tends to be the hardest meal of the day for me. If I don’t have leftovers or something easy waiting in the fridge I amtempted to either not eat lunch, pick at my kids’ leftovers, graze throughout the afternoon, or grab something unhealthy on the road.
Having a good list of easy lunch ideas makes those things less likely to happen.
One of the easiest things for myself for lunch are salads. I love the salad kits that have everything you need all in one package. Even if I have to swap out a dressing to one without sugar they are a healthy, easy option.
One of my other favorite lunches is a chicken salad made with leftover grilled chicken, mayo and plain Greek yogurt. In the winter sometimes I’ll make a quick soup like my Bacon Cauliflower Soup.

It is really convenient that these are packages in a bowl you can mix in, include a fork, and have all the toppings and dressing you need. If you are packing lunch for work, a picnic, or a trip to the beach this is perfect.
I’ll be the first to admit I don’t eat enough leafy greens. I enjoy them but I don’t prepare them myself as often as I should. I don’t think I have ever bought a head of kale. I don’t mind kale in salads or soups but those big heads of it at the farmer’s market can be overwhelming. I prefer when it is already prepped.
Since I am currently growing a baby I know it’s more important than ever to eat healthily. I want to make sure my baby boy is getting all the nutrients he needs. Having easy, nutritious lunch options such as Eat Smart Salad Shake Ups is one way I’ve been doing that.
A couple other ways are stocking up on fresh produce at the farmer’s market and removing junk food from the house. I find that I’m more likely to eat healthy with more options to fit my cravings. One of my cravings lately has been fresh pineapple. It is a much better dessert than sneaking candy from my kids’ stash so I try to have some on hand all the time. I also try not to have things I find tempting in the house. My children love milk chocolate but I’m more of a dark chocolate girl so I’m less likely to be tempted by their treats if there is only milk chocolate available.
